2019 Sevtap Chardonnay – Santa Ynez Valley
This Chardonnay was organically crafted by me in the Santa Ynez Valley, with a focus on elegance, purity, and balance. Fermented cold to preserve its natural acidity and freshness, the wine was then aged for one year in old, neutral oak barrels—not to impart oak flavor, but to allow for gentle concentration and texture development as the wine aged.
Only 10% of the wine went through malolactic fermentation (ML), giving it just a hint of creaminess while maintaining a clean, crisp structure. Inspired by the Chablis style, this vintage is fresh, mineral-driven, and versatile—a Chardonnay for those who prefer subtlety over richness.
